Miso Udon Carbonara

Introduction to Miso Udon Carbonara

The Perfect Fusion of Carbonara and Udon Noodles

Do you remember the first time you tried creamy carbonara? What about the first time you tasted thick udon noodles? Traditional Italian carbonara, with its authentic ingredients like guanciale or pancetta, serves as the perfect base for blending traditional elements with Japanese influences in this unique dish. By combining the two into miso carbonara udon, you are in for a treat that will blow your mind! This recipe post has been a long time coming and is inspired by a restaurant in downtown Los Angeles’s Little Tokyo. When we saw Myojo udon noodles in our local 99 Ranch, we just had to try something like this!

Collaborating with Myojo

Thank you to Myojo for collaborating and sharing your miso carbonara udon recipe and delicious udon noodles with us! Just to give a little background on the Myojo brand, this company was founded in Japan and has been creating artisan noodles since 1950. The noodles they make in the USA are the same ones that they offer to Japanese restaurants, so you can be confident that you’re getting top-quality authentic udon.

Ingredients and Equipment

To make this delectable Creamy Bacon Miso Udon, you’ll need a few key ingredients and some essential kitchen tools. Here’s what you’ll need:

  • 1 package of frozen udon noodles: These chewy udon noodles are the star of the dish, providing a satisfying texture that pairs perfectly with the creamy sauce.

  • 6 slices of cooked bacon, crumbled: The smoky, savory flavor of bacon adds depth and richness to the dish.

  • 2 tablespoons of miso paste: This umami-packed ingredient brings a unique Japanese twist to the traditional carbonara sauce.

  • 2 tablespoons of parmesan cheese, freshly grated: Freshly grated parmesan cheese melts beautifully into the sauce, adding a nutty, salty flavor. Parmigiano Reggiano can be used as an alternative for an even richer and savory finish.

  • 1 egg yolk: The egg yolk helps create a silky, creamy sauce that coats the noodles perfectly.

  • 1 tablespoon of bacon fat: Using bacon fat enhances the dish’s flavor, making it even more indulgent.

  • 1 green onion, thinly sliced: Green onion adds a fresh, slightly sharp contrast to the rich sauce.

  • 1 teaspoon of freshly ground black pepper: A touch of black pepper adds a hint of spice and balances the flavors.

  • 1 tablespoon of olive oil: Olive oil helps to sauté the bacon and combine all the ingredients smoothly.

For equipment, you’ll need:

  • 1 non-stick skillet or wok: Perfect for sautéing and combining ingredients without sticking.

  • 1 pot for boiling water: Essential for cooking the udon noodles to perfection.

  • 1 colander or strainer: To drain the cooked noodles.

  • 1 cutting board: For prepping your ingredients.

  • 1 knife: For slicing the green onion and other ingredients.

  • 1 measuring cup: To ensure accurate measurements.

  • 1 spoon: For stirring and combining ingredients.

Cooking the Udon Noodles

Cooking the udon noodles is a straightforward process, but it’s important to get it just right to achieve that perfect chewy texture. Follow these steps:

  1. Bring a large pot of water to a boil: Use enough water to allow the noodles to move freely and cook evenly.

  2. Add the frozen udon noodles to the pot: Cook according to the package instructions, usually for about 2-3 minutes until they are tender but still chewy.

Once you have your cooked udon noodles, they are ready to be incorporated into the dish.
  3. Drain the noodles: Once cooked, drain the noodles in a colander or strainer and set them aside. This prevents them from becoming mushy.

  4. Heat the olive oil: In a non-stick skillet or wok, heat the olive oil over medium heat. This will help to sauté the bacon and combine all the flavors.

  5. Add the cooked bacon: Stir the cooked bacon into the skillet, allowing it to combine with the oil and release its flavor.

  6. Combine with the noodles: Add the cooked noodles to the skillet, stirring to coat them evenly with the bacon and oil. This step ensures that every bite is infused with delicious bacon flavor.

Making the Creamy Miso Sauce

The creamy miso sauce is the heart of this miso udon carbonara recipe, bringing together the rich flavors of miso paste, parmesan cheese, and a silky egg mixture. To create this luscious sauce, start by combining 2 tablespoons of miso paste and 2 tablespoons of freshly grated parmesan cheese in a medium bowl. Whisk these ingredients together until they form a smooth, cohesive mixture.

Next, add the egg yolk to the bowl and continue whisking until the sauce is creamy and well-blended. The egg mixture is crucial for achieving that signature creamy texture that coats the udon noodles perfectly. If the sauce seems too thick, you can thin it out with a splash of water or some of the cooking liquid from the noodles. Conversely, if the sauce is too thin, a bit more miso paste or parmesan cheese will help thicken it up.

Using high-quality ingredients is key to making a delicious creamy miso sauce. Opt for a rich, savory miso paste and freshly grated parmesan cheese to elevate the flavor profile of your miso udon carbonara. Whether you choose white or red miso, each type will bring its unique twist to the dish, allowing you to customize the flavor to your liking.

The Carbonara Sauce With Egg Yolks

Creating the carbonara sauce is where the magic happens. Follow these steps to make a creamy, flavorful sauce that will coat your udon noodles perfectly:

  1. Whisk the sauce ingredients: In a small bowl, whisk together 2 tablespoons of miso paste, 2 tablespoons of freshly grated parmesan cheese, and 1 egg yolk until smooth. This mixture forms the base of your creamy sauce.

  2. Add the bacon fat: Incorporate 1 tablespoon of bacon fat into the bowl, whisking until well combined. This adds a rich, smoky flavor to the sauce.

  3. Stir in the green onion: Add the thinly sliced green onion to the bowl, stirring to combine. The green onion adds a fresh, slightly sharp contrast to the rich sauce.

  4. Combine with the noodles: Add the cooked noodles to the bowl, stirring to coat them evenly with the sauce. The heat from the noodles will help to thicken the sauce and create a silky texture.

  5. Season with black pepper: Finish the sauce by seasoning it with freshly ground black pepper to taste. The pepper adds a hint of spice and balances the flavors beautifully.

Assembly and Cooking

To assemble and cook creamy miso udon carbonara, start by cooking the frozen udon noodles according to the package instructions. While the noodles are cooking, prepare the egg mixture by whisking together egg yolks, miso paste, and parmesan cheese. In a separate pan, cook the bacon over medium heat until crispy, then add the minced garlic and cook for an additional minute. Once the noodles are cooked, drain them and add them to the pan with the bacon and garlic. Pour in the egg mixture and stir continuously to prevent scrambled eggs. Cook for an additional 1-2 minutes, until the sauce has thickened and the noodles are well coated.

Serving and Storage

Miso Udon Carbonara is best served immediately, garnished with freshly grated parmesan cheese and a sprinkle of scallions. If you need to store the dish, it can be refrigerated for up to 4 days and reheated in the microwave. However, please note that the texture and consistency of the dish may change after refrigeration. To reheat, simply microwave the dish for 30-60 seconds, or until the sauce is warm and the noodles are heated through.

Tips for Achieving the Perfect Texture

Achieving the perfect texture in your miso udon carbonara is all about balance and attention to detail. Here are some tips to help you get it just right:

  • Cook the Udon Noodles Properly: Follow the package directions to cook the udon noodles. This ensures they are tender yet chewy, providing the ideal base for the creamy sauce.
  • Use Cooking Liquid Wisely: If the sauce becomes too thick, a bit of the cooking liquid from the noodles can help thin it out, creating a smooth and creamy consistency.
  • Crisp the Bacon Just Right: Cook the bacon until it’s crispy but not overly so. This adds a delightful texture contrast between the crispy bacon and the creamy sauce.
  • Incorporate the Egg Mixture: The egg mixture enriches the sauce, adding a luxurious, creamy texture. Be sure to mix it in just until combined to avoid over-thickening.
  • Avoid Overmixing: Overmixing the sauce can lead to a thick, sticky consistency. Mix just until the ingredients are well combined for the best results.

By following these tips, you’ll achieve a perfectly textured miso udon carbonara that is creamy, chewy, and utterly delicious.

Troubleshooting and Variations

If you encounter any issues while making Miso Udon Carbonara, here are a few troubleshooting tips:

  • If the sauce is too thick, add a little more pasta cooking water to thin it out.
  • If the sauce is too thin, add a little more miso paste or parmesan cheese to thicken it.
  • If you don’t have miso paste, you can substitute it with a combination of soy sauce and sake.
  • If you don’t have parmesan cheese, you can substitute it with other hard cheeses like Pecorino Romano or Grana Padano.

Some variations you can try to make the dish your own include:

  • Adding some diced vegetables like bell peppers or mushrooms to the pan with the bacon and garlic.
  • Using different types of noodles, such as rice noodles or soba noodles, instead of udon noodles.
  • Adding some spice to the dish with a sprinkle of red pepper flakes or a dash of hot sauce.
  • Using white miso for a bit lighter flavor profile, which is less potent and suitable for recipes that require a gentler taste.

Feel free to get creative with your toppings! You can add cooked vegetables, pickled ginger, or any other ingredients that suit your taste. This dish is versatile and can be customized to your liking. Enjoy!

Customizing the Recipe

One of the best aspects of the miso udon carbonara recipe is its versatility. Here are some ideas to customize the dish to suit your tastes:

  • Add Vegetables: Incorporate diced bell peppers, mushrooms, or even peas into the sauce for added flavor and nutrition.
  • Experiment with Cheese: Try using different types of cheese, such as mozzarella or feta, to change the flavor profile of the sauce.
  • Include Protein: Add cooked chicken, shrimp, or even tofu to the sauce for an extra protein boost.
  • Switch Up the Noodles: While udon noodles are traditional, you can experiment with spaghetti, linguine, or even rice noodles for a different texture.
  • Spice It Up: Add a sprinkle of red pepper flakes, a dash of hot sauce, or some garlic powder to the sauce for an extra kick of flavor.

By customizing the recipe, you can create a miso udon carbonara that is uniquely yours. Experiment with different ingredients and flavor combinations to find your perfect version of this delicious fusion dish.
