What is laphet thoke (Burmese tea leaf salad)?

Fermented tea leaf salad, also known as Laphet Thoke, is a unique and flavorful dish that stands out in Burmese cuisine. This traditional salad uses fermented tea leaves and a variety of crunchy and savory ingredients, offering a taste of Burmese culture and tradition in every bite. In this post, we'll explore the fascinating aspects of this delightful tea leaf salad recipe.

What makes Burmese tea leaf salad different from other salads?

The key ingredient in this dish is fermented tea leaves, known as laphet. These green tea leaves undergo fermentation to create a distinctive, slightly tangy flavor that perfectly complements the other ingredients, often forming the base of a flavorful tea leaf dressing. An essential ingredient that enhances the flavor is fish sauce, adding a salty note that complements the sourness of the fermented tea leaves.

Typically, the salad includes a mix of fried garlic chips, fried yellow split peas, split peas, sunflower seeds, toasted peanuts, and toasted sesame seeds, along with roasted peanuts, sesame seeds, dried shrimp, tomatoes, and shredded cabbage. Shrimp powder is often suggested as an optional addition for those who are not adhering to a vegan diet.

The combination of textures and flavors makes every bite delightful. Lemon juice is often used to enhance the flavor of the blended tea leaves along with garlic, oil, ginger, and salt. Moreover, the unique fermentation process of the tea leaves adds an extra layer of depth to the salad. The tea leaves lightly coat the other ingredients, enhancing the overall taste and texture of the dish.

Sharing this salad with others reflects the hospitality and warmth of Burmese people.
